When you’re something hearty and savory but also a little sweet, banana bread can be a perfect fit! February 23rd is National Banana Bread Day and here is a delicious recipe for Banana Bread with figs and walnuts you should try from Forks Over Knives. Banana bread is a great option when you don’t have much prep time or want to freeze extra. This recipe only takes about 10 minutes for prep time and you can freeze any extra loaves for up to three months! This recipe is vegan but can easily be changed to substitute dairy milk and other options as desired. I like the inclusion of figs in this recipe for additional sweetness and while walnuts are a part of the recipe, you can substitute other nuts, such as almonds, if you prefer.
When you have overly ripe bananas, toss them in the freezer rather than tossing them out. Keep the bananas in their whole peel and place in the freezer. The peels will turn a dark brown color and that’s okay. When you’re ready to make some banana bread, put the frozen bananas on a plate or in a large bowl to thaw. I usually place the bananas in the fridge overnight for a slow thaw but you can also thaw them at room temperature. Don’t be alarmed that the thawed bananas will have a mushy texture. They’re still perfect for baking. Just remove the banana peels and use the thawed banana in your recipe as usual.
